We are in the business of creating great wines that bring great pleasure.
Matt and Simon first met in 2016 at Adelsheim Vineyard, where Simon joined as an intern working alongside Matt on the white wine program. Simon came to Oregon to deepen his understanding of Pinot Noir and improve his English. What began as a short-term internship quickly evolved—Simon became chef de cave of the white wine harvest, while helping Matt sharpen his French. The following year, Matt was promoted to Assistant Winemaker, overseeing Adelsheim’s white wine program. In 2022, he took on a new role as Winemaker at 00 Wines.
Meanwhile, in 2017, Simon launched his own négoce label based in Chassagne-Montrachet while working at Etienne Sauzet in Puligny-Montrachet. By 2021, the project evolved into a full estate when Simon assumed stewardship of the majority of his family’s vineyards.
Despite the distance, our parallel paths allowed us to reconnect regularly—whether in Oregon or Burgundy—and our friendship continued to grow, grounded in a shared passion for wine. When we’re not in the cellar, you’ll likely find us watching sports with an ice-cold beer in hand.
During a visit to Oregon in 2023, we started seriously discussing the idea of working together. The timing wasn’t quite right then, but the idea stuck. By spring 2024, we officially launched our joint project: an organically and biodynamically farmed Chardonnay-focused winery in Oregon’s Willamette Valley.
Matt leads day-to-day operations—sourcing exceptional fruit, collaborating closely with growers, and guiding each step of the winemaking process. Simon travels from Burgundy three times a year to taste, advise, and collaborate. Every decision is made together, rooted in shared values, experience, and a commitment to quality.
Our first vintage is 2024, to be released in January 2026. We plan to produce 8,000 bottles across four unique wines that express the diverse terroirs of the Willamette Valley.
